What is the point of this course?

The Environmental Citizen is a course where students take on a project of real-world significance and work collaboratively with each other and outside partners to get something of substance done.

My section of this course, "Are we really what we eat?", is about getting more local foods into campus dining facilities.  Students will gain an understanding about how food choices relate to environmental ethics while developing a plan for our dining services.

As part of this course, students are asked to keep a weekly log.  These logs are reflections by students on what they've learned through their research and readings, their personal interactions with food, and the work they've accomplished on the course project.
